The traditionally matured herrings are caught in Norway and are
carefully aged in barrels. After maturation, they are placed in
a brine made of sugar, water, vinegar, salt, and spices. These
herring are known for their firm texture, pleasant bite, and a
fine balance between acidity and sweetness.
Hirtshals Røgeri - Hot Smoked Salmon 125 g
Hot-smoked products have a firmer texture and a richer flavor
compared to cold-smoked varieties. This distinctive character is
developed through gentle smoking at around 70 °C for 2–3 hours.
